Sautéed Corn With Onion And Tomatoes

- 6-8 ears fresh corn shopping list
- 1 large tomato – red but firm shopping list
- 2-3 slices sweet vidalia onion shopping list
- 1 clove garlic shopping list
- 2-3 Tablespoons butter shopping list
- salt shopping list
- ground black pepper shopping list
How to make it
- Shuck and wash corn. Use a vegetable brush to remove corn silk.
- Cut corn from cob.
- Remove blossom and stem scabs from tomato and dice the tomato. (Chilling the tomato will make dicing easier.)
- Chop the onion to pieces approx. the same size as the cut corn.
- Finely chop the garlic.
- Melt butter in a heavy skillet over medium high heat.
- Add all ingredients to the pan and season to taste with salt and ground black pepper.
- Sauté 1-2 minutes and reduce heat to medium.
- Continue to sauté until onion just begins to clear, being careful not to overcook tomato.
