How to make it

  • Shuck and wash corn. Use a vegetable brush to remove corn silk.
  • Cut corn from cob.
  • Remove blossom and stem scabs from tomato and dice the tomato. (Chilling the tomato will make dicing easier.)
  • Chop the onion to pieces approx. the same size as the cut corn.
  • Finely chop the garlic.
  • Melt butter in a heavy skillet over medium high heat.
  • Add all ingredients to the pan and season to taste with salt and ground black pepper.
  • Sauté 1-2 minutes and reduce heat to medium.
  • Continue to sauté until onion just begins to clear, being careful not to overcook tomato.
