How to make it

  • Preheat broiler (500) degrees.
  • Sandwich cheese of choice between two of the shrimp, wrap with bacon and secure with a long tooth pick or short skewer.
  • Place on a rack sprayed with cooking spray and broil 4 minutes per side until bacon is crispy. Let the fat drip away and feel very virtuous.
  • Serve with sauce made of apricot preserves (zap in microwave for 1 minute at 40 percent power) mixed with vinegar, mustard and hot red pepper flakes.
  • Cheese flavors that we like a lot are smoked gouda, extra sharp white cheddar and a jalapeno monterey jack (my favorite). Don't try a processed cheese food, it doesn't work.

    I haven't had shrimp with cheese in a long time if ever, and couldn't remember if I liked it or not, so I was a little worried. I LOVED it!! I could eat a ton of these in one sitting, but I allowed myself 5 this time :) Added a little more in Frankieanne's IMI link below.

    These were really good! I had a bit of trouble getting them all put together and on the skewer but I managed. I only used 1/2 of a piece of bacon for each bundle and used smoked Gouda. Because of the size of my shrimp my cheese lengths were only about 1" and 1/2". The dipping sauce went really well with the flavor of the shrimp but I ended up eating the final two without it. I grilled these on my charcoal grill, probably about 5 minutes each side. I never had cheese with shrimp before and I really like it! I added a picture and a thread in IMI on 6/21/14.

    Oh yummy - again...this sounds delicious, and I love the dipping sauce too - so easy. This will impress the family and friends at the next party!
