Jalapeno Cilantro Coleslaw

My mother in law and I made this up quick one day! It's some of the best coleslaw I have ever had!
Ingredients
- 1/2 head green cabbage shredded shopping list
- 1/2 head purple cabbage shredded shopping list
- 3 carrots shredded shopping list
- 3 green onions chopped shopping list
- 1/2 cup-1 cup mayo (depending on how creamy you like yours) shopping list
- 1 bunch of cilantro shopping list
- 1-2 jalapenos diced and seeded (seeding is optional) shopping list
- juice of 1 lime shopping list
- salt & pepper shopping list
How to make it
- In a large bowl mix together the cabbage, carrot and green onion. Set aside.
- In a blender or food processor add the mayo, cilantro, jalapenos, lime and S&P. Blend until creamy. Taste and add more seasoning if needed.
- Now mix into the coleslaw mix and enjoy!

Had this tonight with my steak - Excellent! Only I didn't have any purple cabbage, so just used green. Also, subbed white onion for green, cuz it's what I had. But it was great nonetheless - the lime juice, jalapenos and cilantro really make it go...more
