How to make it

  • Boil or steam lobsters for about 12 minutes, and remove meat
  • In a small stock pan, melt butter
  • Chop large onion and add to melted butter and cook until translucent
  • Slowly add the flour, and stir until combined to make a thick roux.
  • Add fish broth, and simmer to reduce
  • Add frozen peas and pearl onions
  • Add heavy cream
  • Salt and pepper to taste
  • Last, add lobster, and remove from heat
  • Preheat oven to 375
  • In a 9" pie pan, pour mixture and cover with puff pastry, pinching the edges
  • (You can place puff pastry on the bottom of the pan, also, for added flavor..grease pan first. I've done it that way and actually prefer it, but did not have enough puff pastry this time!!)
  • Slice holes in the top to allow steam to vent during cooking
  • Make an egg wash with egg and 1 tsp water, and coat the top of the pastry
  • Sprinkle Sea salt on crust
  • Bake for 1 hour and 10 minutes, or until crust is gold and crispy
