Cashew Chicken

                    - 4 (1-3/4lb total) boneless,skinless chciken breasts,thinly sliced shopping list
- 3 TB dry sherry shopping list
- 2 tsp fresh ,grated ginger shopping list
- 2 cloves garlic,sliced shopping list
- 4-1/2 tsp cornstarch shopping list
- 3/4 c low sodium chicken broth shopping list
- 2 TB low sodium soy sauce shopping list
- 3 TB hoisin sauce shopping list
- 1 TB rice vinegar shopping list
- 2 tsp lt.brown sugar shopping list
- 2 tsp canola oil shopping list
- 1/2 c unsalted toasted cashews shopping list
- 2 scallions,thinly sliced shopping list
- 1/4 tsp red pepper flakes shopping list
How to make it 
                    - In a bowl,combine chicken,sherry,garlic and 2 tsp cornstarch.
- Chill 30 mins. In another bowl,combine broth,soy sauce,hoisin,vinegar,sugar and 2-1/2 tsp cornstarch;set aside.
- Saute 1 tsp oil and half the chicken in large,non-stick skllet over med-high heat until cooked through,about 5 mins;transfer to plate. Repeat with remaining chicken and oil
- Return chicken to skillet. Stir in broth mixture and bring to simmer'cook until sauce thickens,about 1 min. Add cashews and serve with scallions and red pepper flakes.
