How to make it

  • 1. Cook the tomatoes for 15 minutes and drain off the excess of liquid. Add celery, onion, bell pepper and chiles and simmer for 1 1/2 hour or until half of it was evaporated.
  • 2. Add the rest of the ingredients and simmer for an additional hour. Remove from the heat and puree until smooth
  • 3. Leave it in the fridge but not to long (use it in the delay of 7 days).

    Homemade ketchup sounds very interesting and I like the 'healthier slant', would sure cut down on the old sodium intake. (I am a Heinz fan though I will admit). Having to use 8 lbs. of tomatoes makes me hesitate a bit. Especially when you say I have to use it up within a week. How much ketchup can one man eat I wonder?
