The Ultimate Chicken Salad

Make it a day ahead; chunky chicken and fruit with a great dressing
Ingredients
- 2 quarts cooked white chicken, coarsely cut (6 whole breasts) shopping list
- 2 lbs seedless grapes, red or green shopping list
- 2 cups chopped celery shopping list
- 1/4 cup green onions, thinly sliced shopping list
- 2 cups mayonnaise shopping list
- 1 tbs curry powder shopping list
- 2 tbs chopped chutney shopping list
- 2 (6 oz) cans water chestnuts, drained and sliced shopping list
- 2 tbs soy sauce shopping list
- 1 (20 oz) can pineapple chunks, drained well shopping list
- 2 tbs lemon juice, optional shopping list
- 1 cup slivered almonds, toasted shopping list
How to make it
- Combine all ingredients, except almonds; chill overnight
- Sprinkle toasted almonds on top of chicken salad before serving.
- If you like, serve on lettuce; garnish with wedges of your favorite melon
- Makes 12 main dish servings
