Garlic Parmigiano Smashed Potatoes Recipe
This is an awesome potato recipe. Great flavors and they are so creamy.

Ingredients
  • 1-1/2 pounds yukon gold potatoes peeled and cut into 1" pieces
  • 2/3 cup half and half
  • 1 tablespoon fresh garlic paste
  • 2 tablespoon butter
  • 3 ounces parmigiano reggiano freshly shredded
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly cracked black pepper

Directions
  1. Place cut potatoes into a large pot.
  2. To the pot add enough water to cover the potatoes by about 1 inch and a few liberal pinches of kosher salt.
  3. Turn burner to high.
  4. Bring potatoes to a boil over high heat.
  5. Once the potatoes have reached a boil allow them to cook for another 5 minutes.
  6. Turn off the burner.
  7. Drain potatoes in a colander then return them to the pot that they were originally cooked in and place the pot back on to the burner.
  8. Add half and half, garlic paste and butter to the pot with the potatoes.
  9. Using a hand masher mash the potatoes thoroughly until all cream has been incorporated and potatoes are creamy yet still slightly lumpy.
  10. Add shredded cheese then stir to combine evenly.
  11. Season with salt and freshly cracked black pepper and serve hot.

I just made a version based on this recipe, with a little mascarpone cheese instead of half and half, and topped with a bit of parsley. I also used fresh garlic and boiled it with the potatoes to make my own paste. It came out delicious! I just made a small portion with about 3 small potatoes. My Iranian roommate had never tasted anything like it and she liked it a lot, and I did too! Thanks for the recipe!
