Ingredients

How to make it

  • Place cut potatoes into a large pot.
  • To the pot add enough water to cover the potatoes by about 1 inch and a few liberal pinches of kosher salt.
  • Turn burner to high.
  • Bring potatoes to a boil over high heat.
  • Once the potatoes have reached a boil allow them to cook for another 5 minutes.
  • Turn off the burner.
  • Drain potatoes in a colander then return them to the pot that they were originally cooked in and place the pot back on to the burner.
  • Add half and half, garlic paste and butter to the pot with the potatoes.
  • Using a hand masher mash the potatoes thoroughly until all cream has been incorporated and potatoes are creamy yet still slightly lumpy.
  • Add shredded cheese then stir to combine evenly.
  • Season with salt and freshly cracked black pepper and serve hot.

    I just made a version based on this recipe, with a little mascarpone cheese instead of half and half, and topped with a bit of parsley. I also used fresh garlic and boiled it with the potatoes to make my own paste. It came out delicious! I just made a small portion with about 3 small potatoes. My Iranian roommate had never tasted anything like it and she liked it a lot, and I did too! Thanks for the recipe!
