Garlic Parmigiano Smashed Potatoes

- 1-1/2 pounds yukon gold potatoes peeled and cut into 1" pieces shopping list
- 2/3 cup half and half shopping list
- 1 tablespoon fresh garlic paste shopping list
- 2 tablespoon butter shopping list
- 3 ounces parmigiano reggiano freshly shredded shopping list
- 1 teaspoon kosher salt shopping list
- 1 teaspoon freshly cracked black pepper shopping list
How to make it
- Place cut potatoes into a large pot.
- To the pot add enough water to cover the potatoes by about 1 inch and a few liberal pinches of kosher salt.
- Turn burner to high.
- Bring potatoes to a boil over high heat.
- Once the potatoes have reached a boil allow them to cook for another 5 minutes.
- Turn off the burner.
- Drain potatoes in a colander then return them to the pot that they were originally cooked in and place the pot back on to the burner.
- Add half and half, garlic paste and butter to the pot with the potatoes.
- Using a hand masher mash the potatoes thoroughly until all cream has been incorporated and potatoes are creamy yet still slightly lumpy.
- Add shredded cheese then stir to combine evenly.
- Season with salt and freshly cracked black pepper and serve hot.
