No Knead To Worry Ferrgasso Bread Recipe
I LOVE homemade bread but have never mastered the art of kneading, so this is a definite favourite of mine! All you "knead" is a big bowl, a wooden spoon and plenty of elbow grease!

Ingredients
  • 1 tsp sugar
  • 1/2 cup warm water
  • 2 Tbsp active dry yeast
  • 1 1/2 cups milk
  • 1/2 cup butter
  • 1/4 cup sugar
  • 1 Tbsp salt
  • 4 to 5 cups flour, divided
  • 3 green onions, minced
  • 1 clove garlic, minced
  • 1 1/2 cups grated aged Cheddar cheese

Directions
  1. Dissolve 2 tsp sugar in warm water in a large bowl. Sprinkle yeast over water and let stand 10 minutes.
  2. Meanwhile, place milk, butter, 1/4 cup sugar and salt in a medium saucepan. Over medium heat, heat til milk is warmed and butter is melted. Add milk mixture and 2 cups of flour to the yeast mixture; beat with a wooden spoon until smooth.
  3. Add the green onions, garlic and cheese to the flour mixture and mix in well. Add the rest of the flour, 1 cup at a time, beating with a wooden spoon after each addition and finally until the mixture is the consistency of a soft dough.
  4. Cover with a warm damp cloth and place in a warm area; let rise for 30 minutes.
  5. Stir dough down and spoon into a greased 2 squart souffle (high sided casserole) dish. Cover again and let rise until doubled in bulk, about 45 minutes.
  6. Place in a preheated 375F oven for 35 to 45 minutes. Bread is done if it sounds hollow when tapped.
  7. Cool on a wire rack for 10 minutes before removing from pan.
  8. Makes one large loaf and just "might" not feed 8, depending on how many "bread hawgs" you have at the table! :-)

We're all "bread hawgs" in my house. It wouldn't last very long at all. I can't wait to try it. Probably this weekend...


Ohmygawd can i just say i bought a bread book to learn to bake delicious rustic breads and my attempts were thwarted by my lame rosemary focaccia FLATBREAD. lame. i can't wait to try this.


This sounds like a bread I could make with my "kneading deficiency" - sounds wonderfully tasty!!!


I'm gonna make this !!! I love baking bread and not having to knead it is a HUGE plus !


This bread is incredible. My daughter made it today while I was out and it is so good! Thank you. I could eat it alone for a meal.
