Pineapple Chicken

- INGREDIENTS: shopping list
- 500g skinless chicken thighs, thinly sliced shopping list
- 4 pieces canned pineapple rings, diced shopping list
- 150g fresh pineapple, diced shopping list
- 1 green capsicum, sliced shopping list
- 1 tomato, cut into wedges shopping list
- cornflour for coating chicken shopping list
- oil for deep-frying shopping list
- MARINADE: shopping list
- 1 tsp salt shopping list
- 1/2 tsp sugar shopping list
- 1 egg shopping list
- 1 tsp curry powder shopping list
- 1 tbsp corn flour shopping list
- SAUCE: shopping list
- 1 tbsp Thai chili sauce shopping list
- 1 tbsp tomato sauce shopping list
- 1 tbsp chili sauce shopping list
- 3 tbsp canned pineapple juice shopping list
- 1 tsp lemon juice shopping list
- 1tbsp sugar shopping list
- 1/2 tsp salt shopping list
How to make it
- Combine chicken with marinade and season for 30 minutes.
- Coat with corn flour and deep-fry in hot oil until golden brown.
- Dish and drain.
- Leave 1tbsp oil in wok, put in pineapple, capsicum, tomato and stir well.
- Pour in sauce and cook until thick.
- Add in fried chicken breast, stir well and dish up.
- TIP: I didn't have Thai chili sauce, instead I used Sweet Chili Sauce for all the chili sauce that was needed.
