How to make it

  • Toss diced onion in lemon juice and let rest while preparing rest of the salad.
  • Cook pasta per package directions and drain and toss to keep from sticking.
  • In large bowl, add cooked pasta, tomatoes and cheese and toss lightly to mix.
  • In small bowl, mix together pesto and olive oil then add the onion and lemon juice
  • Pour over pasta and tomatoes and carefully toss to coat.
  • Add salt and pepper.
  • Serve immediately or it can sit out a couple hours before/while serving, but it's best to not refrigerate, first.

    This looks great Keni! Although, whenever you add cheese to something I am going to fall in love with it, and Fresh Mozzarella is the best!
