Caprese Inspired Pasta Salad

- 1lb tri colored rotini shopping list
- 1/4 cup prepared pesto shopping list
- juice from 1/2 lemon shopping list
- 1lb cherry tomatoes, quartered, or grape tomatoes, halved shopping list
- 1/2 red onion, diced shopping list
- about 8-10oz fresh mozzarella, cubed shopping list
- 2T quality olive oil shopping list
- kosher or sea salt and fresh ground pepper shopping list
How to make it
- Toss diced onion in lemon juice and let rest while preparing rest of the salad.
- Cook pasta per package directions and drain and toss to keep from sticking.
- In large bowl, add cooked pasta, tomatoes and cheese and toss lightly to mix.
- In small bowl, mix together pesto and olive oil then add the onion and lemon juice
- Pour over pasta and tomatoes and carefully toss to coat.
- Add salt and pepper.
- Serve immediately or it can sit out a couple hours before/while serving, but it's best to not refrigerate, first.
