How to make it

  • In food processor or good blender, process pecans, oats and coconut until finely chopped.
  • In stand or hand mixer bowl, beat butter and brown sugar until blended and creamy.
  • Add egg and beat well.
  • Add vanilla and beat again.
  • Slowly add flour, baking powder and salt and stir, scraping sides, until blended well.
  • Fold in pecan/coconut mixture.
  • Spoon mixture onto parchment lined cookie sheets in heaping teaspoonfuls, making sure to space a few inches apart. These will spread a lot! :)
  • Bake 5-7 minutes at 350 until edges are nicely browned. Be careful not to let burn.
  • Let cool a few minutes then carefully peel off of parchment paper and let cool, completely, on wire racks.
  • Melt chocolate and drop a small amount onto the middle of one cookie then place another cookie against first cookie, trapping the chocolate in the middle.
  • Let cool completely.

    I love these cookies. I would like to try making them. Hope its not too much work for me or I may just eat the dough : ) Plus it gives me a reason to open up the Kitchen Aid stand mixer thats been sitting in the box since I bought it :) Thanks for sharing.
