Rum Frosted Pumpkin Bars

- 1 cup all-purpose flour shopping list
- 1 cup sugar shopping list
- 1 teaspoon ground cinnamon shopping list
- 1/2 teaspoon ground cloves shopping list
- 1/4 teaspoon nutmeg shopping list
- 1/4 teaspoon ginger shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1 egg shopping list
- 2 egg whites shopping list
- 1 plus 2 tablespoons cup canned pumpkin shopping list
- 1/4 cup canola oil shopping list
- 2 tablespoons water shopping list
- 4 ounces reduced fat cream cheese shopping list
- 1 1/2 cups confectioners' sugar shopping list
- 1 teaspoon vanilla extract shopping list
- 1/4 teaspoon rum extract shopping list
How to make it
- 1.In a mixing bowl, combine the first eight ingredients. Add egg, egg whites, pumpkin, oil and water; mix well. Transfer to an 11-in. x 9-in. baking pan coated with nonstick cooking spray. Bake at 350 degrees F for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
- 2.In a mixing bowl, beat cream cheese. Beat in confectioners' sugar, then vanilla and rum. Frost bars. Chill for 15 minutes, then cut. Refrigerate leftovers.
