How to make it

  • Preheat the oven to 400
  • Lay the flatiron steak on a piece of plastic wrap, and then lay one piece of plastic wrap over the steak See Photo
  • Pound steak to consistent thickness, approx 1/2"
  • Pepper the inside generously See Photo
  • Layer goats cheese, crab meat, parsley, red pepper and garlic evenly See Photo
  • Roll the steak carefully, tucking the stuffing in as you roll
  • Tie approximately every 2 inches See Photo
  • Salt and pepper the outside of the bundled roast generously
  • In a large skillet, heat sesame oil
  • Sear the roast on all sides, until dark brown in color See Photo
  • Transfer roast to a baking pan with baking rack, if you have on, for even cooking
  • Cook for 12 - 15 minutes, depending on preferred doneness
  • Remove from oven and allow to rest for 5 minutes before slicing
  • Slicing with string still on the bundle will make it easier to keep it together See Photo
