Brooklyn Shrimp Chowder

- 1 Cup Frozen or Leftover Veggies (Root veggies like broccoli, cauliflower, zucchini, carrots, celery, squash etc are best but you can use anything, even corn and spinach if you want to use it up) shopping list
- 1/4 Cup leeks or onion, diced shopping list
- 1/2 Cup cubed potatoes and/or pasta shopping list
- 1 Tbspn Fresh -or- 1 tsp dried dill shopping list
- 1/4 Cup milk, Half n' Half or heavy cream shopping list
- 1 Tbspn butter or margarine shopping list
- 1 can Campbell's cream of shrimp soup shopping list
- 1 tsp smoked paprika shopping list
- 1 tsp black pepper shopping list
- 1/2 packet of shrimp Flavoring that comes with the ramen package shopping list
- 1 1/2 - 2 Cups water -or- fish/shrimp stock shopping list
- Optional: Actual shrimp shopping list
How to make it
- Over a medium-high flame, bring the water and/or fish stock to a boil and throw the veggies, onions and the noodles and/or potatoes in to cook. This may not seem like enough liquid but you don't want to make the soup too thin, so deal with it. Stir often to make sure things are cooking evenly.
- Test the potatoes and/or pasta after 5-7 minutes. If it's almost done, scoop the can of shrimp soup in there with everything, stirring constantly.
- Add the milk, butter, paprika, dill, 1/2 the ramen flavoring packet and stir well. You won't need a roux with this soup, it's thick enough.
- If you have actual shrimp, make sure they're rinsed and deveined, then toss them in about 2-3 minutes after the veggies.
- Granted, frozen veggies will cook a lot quicker than fresh, and depending on how you like your pasta cooked, that time may vary as well. So keep all these things in mind when preparing this dish for yourself and your families, and judge cooking time accordingly. When everything is done to your specifications, cut off the heat and serve along side garlic bread, dinner rolls or the fry bread from a few recipes ago. Yummeh!
