How to make it

  • Heat frying oil ( I use shortening) to 350 degrees
  • Cut chicken into bite sized bits
  • Combine flour and all spices in a bowl, and dredge the chicken
  • Let chicken rest for a minute or two
  • Fry approximately 5 minutes. The chicken is so small, it will overcook quickly, so watch them carefully
  • Remove from oil and toss with your favorite Buffalo Wing sauce and set aside
  • Mushrooms:
  • Carefully spoon out the stem and gills
  • Fry in oil for approximately 3 minutes, or until the oil stops bubbling
  • Remove from oil, and pat with paper towel to absorb any excess oil
  • Place approximately 1 tsp of Bleu Cheese Dressing in each cap, and then top with the chicken bites
  • Serve with cold beer and a good game!!
