How to make it

  • Preheat oven to 350F. Grease a 2-quart shallow baking dish.
  • Mash sweet potatoes in a large bowl. Stir in the sugar, butter and nutmeg. Shape the mixture into 8 balls and press a marshmallow into each. Coat the balls with cornflakes and flatten slightly.
  • Arrange the balls in the prepared baking dish. Bake until lightly browned, 10 to 15 minutes.

    Oh Jerry ! You did it again.... more reasons for me to move back to the states so I can buy canned sweet taters :-) A few chopped pecans won't go amiss in this either. Thanks.

    This sounds different and unique. I'm going to have to give this a try...especially since I can not get my daughter to eat sweet potato anything...yet. :D
