Sweet Potato Puffs Recipe
Here is a fun twist on marshmallow-covered sweet potatoes that the whole family will love. Great all year round.

Ingredients
  • 1 29-ounce) can sweet potatoes, drained
  • 1/2 cup sugar
  • 5 Tbs. butter, softened
  • 1/2 tps. ground nutmeg
  • 8 large marshmallows
  • 2 cups crushed cornflakes

Directions
  1. Preheat oven to 350F. Grease a 2-quart shallow baking dish.
  2. Mash sweet potatoes in a large bowl. Stir in the sugar, butter and nutmeg. Shape the mixture into 8 balls and press a marshmallow into each. Coat the balls with cornflakes and flatten slightly.
  3. Arrange the balls in the prepared baking dish. Bake until lightly browned, 10 to 15 minutes.

Jerry we have this at every major Holiday meal...sometimes with cereal and sometimes without.... either way its a yummy side to any meal......


This sounds different and unique. I'm going to have to give this a try...especially since I can not get my daughter to eat sweet potato anything...yet. :D


Oh Jerry ! You did it again.... more reasons for me to move back to the states so I can buy canned sweet taters :-) A few chopped pecans won't go amiss in this either. Thanks.


Hmmmmmmmm...never thought of doing this with the sweet taters. I will just have to give this a try.
