Ingredients

How to make it

  • Preheat oven to 350
  • In skillet over medium heat, add olive oil and mushrooms
  • Saute until done
  • Set aside to cool
  • Prepare stuffing according to package directions
  • Add to large mixing bowl and set aside to cool
  • Once cooled, add stuffing, spinach, mushrooms ,cheese, salt and pepper: combine
  • Divide into 6 portions
  • Place 1 portion in the middle of chicken breast and roll chicken around stuffing
  • Place on baking sheet, seam side down
  • Bake until internal temp is 150.
  • Tent with foil to rest

    Made these last night and they were delicious. One of those dishes where an hour later you sneak back to the fridge to go grab another morsel (yes, I did!). I used fresh spinach just because I had it on hand and it worked fine. It's a really nice looking recipe and 'guest' worthy. I see in your picture Corrine that you have a gravy over top of yours which would have been a nice addition. What did you use? I also thought that perhaps next time I make it I might roll them in a Panko Breadcrumb batter too....Mmmmmm....Loved, loved, loved them...Thanks for a new great recipe to add to our rotation!
