How to make it

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove from skillet, drain on paper towels, leave the bacon grease in the skillet.
  • To the hot bacon drippings, add the vinegar, lemon juice, sugar and pepper. Add the green onions and grape tomatoes. Stir over medium heat until hot.
  • In a large bowl, combine the dressing with the lettuce and toss to evenly coat. Sprinkle with crumbled bacon and croutons.
  • I rarely use precise measurements for ingredients (unless I'm baking) so just use the amounts of green onion, tomatoes, lettuce & croutons that makes the salad yummy for you!

Tasty. I used four pieces of pre-cooked bacon and I think the recipe should specify that. I think five pieces of regular bacon for one salad would be too much but maybe that's just me. I used 6 grape tomatoes and I'm not certain how many green onions as I chopped up a bunch for another recipe as well. Probably a tablespoon of them though. The dressing was sweet but I like that! I think red onions would be great with this, too. Thanks for the great lunch. Added a picture and a thread in IMI 6/7/14
