How to make it

  • Prepare the squash, peeling it and/or cutting it open and scooping out the seeds
  • Cut into square, bite-sized chunks
  • Bring a pot of salted water to a boil, then reduce heat to sim and add the squash. Cover and cook until tender (about 5-10 mins.)
  • Drain the squash in a colander and set aside
  • Mix together eggs, cream, about 1/3 of the cheese, a pinch of salt, pepper and nutmeg to taste, then stir into the cooked squash
  • Mix together well
  • Pour mixture into a casserole dish and spread the remaining cheese evenly on top
  • Bake at 200°C for 30 minutes, or until the cheese is well melted and golden brown
  • Serve hot
