Easy Gratin à Courge (squash gratin)

- A fair sized squash or pumpkin (the size depends on how many servings) shopping list
- 2 eggs shopping list
- 2 tablespoons heavy cream shopping list
- 100 g gruyère, or grated cheese (will taste good with mozzarella or swiss if no gruyère) shopping list
- salt, pepper, and nutmeg shopping list
How to make it
- Prepare the squash, peeling it and/or cutting it open and scooping out the seeds
- Cut into square, bite-sized chunks
- Bring a pot of salted water to a boil, then reduce heat to sim and add the squash. Cover and cook until tender (about 5-10 mins.)
- Drain the squash in a colander and set aside
- Mix together eggs, cream, about 1/3 of the cheese, a pinch of salt, pepper and nutmeg to taste, then stir into the cooked squash
- Mix together well
- Pour mixture into a casserole dish and spread the remaining cheese evenly on top
- Bake at 200°C for 30 minutes, or until the cheese is well melted and golden brown
- Serve hot
