Banana Brickle Bites

- 1 cup brown sugar shopping list
- 1/2 cup granulated sugar shopping list
- 2 cups mashed ripe bananas shopping list
- juice from 1/2 lemon shopping list
- 1/2 stick, softened shopping list
- 3 eggs shopping list
- 1 1/2 cups flour shopping list
- 2t baking powder shopping list
- 1t baking soda shopping list
- 1/2t salt shopping list
- 1/2t cinnamon shopping list
- 1/2t nutmeg shopping list
- 1 heaping cup toffee baking chips shopping list
- cream cheese frosting shopping list
- 1 block cream cheese, softened shopping list
- 1 stick butter, softened shopping list
- 1t fresh lemon juice shopping list
- t vanilla shopping list
- 3-4 cups powdered sugar shopping list
How to make it
- Mix sugars, bananas, butter, lemon juice and eggs in mixing bowl.
- Stir in flour, baking powder, baking soda, cinnamon, nutmeg and salt.
- Fold in toffee chips
- Spoon mixture into mini muffin tins(it will probably take 18-24 of them) You can use liners, or not..I didn't.. and they didn't stick, but I use a decent quality pan.
- Bake at 350 for about 20 minutes until toothpick comes out nearly clean.(I like a TINY bit of crumb left on my muffins, cakes and cupcakes...I don't like over baking)
- Let cool a few minutes in pan, then remove to wire cooling rack.
For Cream Cheese Frosting
- Whip together cream cheese, lemon juice , vanilla and butter until light and smooth.
- Add sugar a lil bit at a time, mixing well, until desired spreadable consistency.
- Frost cakes and sprinkle with extra toffee bits, if desired.
