Spinach Soup With Gruyere

- 2 tbsp olive oil shopping list
- 10 oz fresh spinach shopping list
- 2 cloves garlic, finely minced shopping list
- 4 tbsp butter shopping list
- 1/2 whole medium onion shopping list
- 1/4 cups flour shopping list
- 5 cups whole milk shopping list
- 2 tsp kosher salt shopping list
- 1/2 tsp cayenne pepper shopping list
- Freshly ground black pepper shopping list
- 4 ozs, gruyere cheese, grated shopping list
How to make it
- In a large skillet, heat olive oil over medium heat. Add spinach & garlic, cook for 2-3 minutes, stirring constantly, or until wilted. Add spinach to blender or food processor. Pour in 1/4 cup hot water, pulse until pureed. Set aside.
- In large soup pot, cook onion in butter over medium heat until onion begins to soften. Sprinkle flour over the top, stir to combine. Cook for about 2 minutes, then pour in milk, stirring occasionally. Add salt, pepper and cayenne & stir to combine. Cook over medium heat for 5 minutes, stirring constantly. Pour in pureed spinach, cook another 3-5 minutes until thickened.
- Check seasonings, adding more salt, pepper or cayenne as needed. Serve in a bowl. Add grated Gruyere & enjoy!
