Ingredients

How to make it

  • Combine crushed cereal and cinnamon in shallow pan or dish(pie plates work great)
  • Using a SMALL ice cream scoop(sometimes called cookie scoop), scoop out portions of the ice cream into balls and drop them on a platter.
  • If you work quickly, you can do them all at once, otherwise, you MIGHT want to store half in the freezer and work in batches. :)
  • You want them to remain unmelted, but they don't have to be firm.
  • Roll ice cream portions into crumbs, lightly pressing if you need to, to cover surface.
  • Again, work in batches, if needed, but you don't want the ice cream to start melting.
  • Refreeze until firm.
  • Serve with warmed honey or chocolate sauce drizzled over it, and whipped cream, if desired.

I made these using cinnamon Life cereal rather than the Chex, but only because that is what I had on hand. They're an easy, yet impressive dessert. I don't own an ice cream scoop, which made it a little more challenging..I ended up using my hands! Good stuff!
