How to make it

  • Melt butter and olive oil and saute onion and garlic over low heat for about 5 minutes.
  • Add all remaining ingredients except lime juice and sour cream.
  • Bring to a boil then immediately reduce heat to simmer.
  • Simmer, uncovered, stirring occasionally, for about 1 hour, or until meat and potatoes are done and tender.
  • When done, add lime juice and sour cream and carefully stir together.
  • Garnish with fresh dill
  • *use less stock of a thicker stew/soup is desired

    I'm going to have to give this a try -- I doubt I will use all of the horseradish you state -- I cook for someone who is 85 and I don't think she'd keep me around if I tried to kill her with horseradish! hahaha

    I like horseradish but... you really used a whole 8 oz bottle? [steps back in awe] Makes me sweat just thinking about it. Actually this sounds great with an ice-cold beer.
