How to make it

  • Cook the greens until tender. Drain and cut them to a pulp.
  • Fry the garlic in the oil over low flame, until the garlic is golden, then discart it (the objective is to flavor the oil).
  • Add the flour, mix to a paste, combine the green pulp and boil gently for a couple of minutes, to cook the flour and thicken the mousse.
  • Add the cream, stir and season with a few drops of lemon juice and salt and pepper to taste.
