Green Mousse

- 1 lb cleaned turnip-tops or spinach (only leaves) shopping list
- 2 tbsp olive oil shopping list
- 1 tbsp flour shopping list
- few drops lemon juice or scant tsp wine vinegar shopping list
- 1 clove garlic (whole) shopping list
- 2 tbsp single cream shopping list
- salt and pepper shopping list
How to make it
- Cook the greens until tender. Drain and cut them to a pulp.
- Fry the garlic in the oil over low flame, until the garlic is golden, then discart it (the objective is to flavor the oil).
- Add the flour, mix to a paste, combine the green pulp and boil gently for a couple of minutes, to cook the flour and thicken the mousse.
- Add the cream, stir and season with a few drops of lemon juice and salt and pepper to taste.
