Fresh Layered Salad

- about 8oz baby spinach, roughly torn(I didn't, but I will, next time... it will make it much easier to cut and serve) shopping list
- 1lb thick cut smoked bacon, cooked crisp and crumbled shopping list
- about 1 cup snow, sugar or snap peas, cleaned and cut in half shopping list
- 1 large, or 2 small, bell peppers, chopped shopping list
- 4-5 green onions, chopped shopping list
- 1 cup fresh tomatoes, cut(I used cherry tomatoes, quartered) shopping list
- 2 avocados, diced shopping list
- 1 cup shredded colby, cheddar or cojack cheese shopping list
- 1/2 large lemon, juiced shopping list
For Dressing
- 1/2 lemon, juiced shopping list
- 3/4cup mayonnaise shopping list
- 1/2 cup sour cream shopping list
- 2t Dijon shopping list
- 1T dried dill weed shopping list
- 1 clove garlic, minced shopping list
- 2t worcestershire sauce shopping list
- 1/4-1t cayenne or hot sauce shopping list
- fresh ground black pepper shopping list
How to make it
- Toss diced avocado with lemon juice from the first 1/2 of the lemon
For Dressing
- Combine all dressing ingredients in glass bowl, whisking well to combine. Set aside
To assemble salad
- Layer ingredients in small trifle bowl as desired...here is how I did it:
- Spinach, tomatoes, onions, peppers, snap peas, bacon, avocado.
- Spread dressing over top, making sure to 'seal' the edges but spreading the dressing all the way to the bowl.
- Sprinkle with cheese and add a lil additional bacon and onions, if desired.
- Refrigerate at least 6 hours, but overnight, if possible.
- *this salad isn't easy to serve up prettily, but nobody will care. ;)
