Mystic Golden Honey Cakes

- 1 1/2 cups AP flour shopping list
- 1/2 cup whole wheat flour shopping list
- 2t baking powder shopping list
- 1t baking soda shopping list
- 1/2t kosher salt shopping list
- 2t cinnamon shopping list
- 1t fresh ground nutmeg shopping list
- 1 cup brown sugar shopping list
- 1/2 cup raw sugar shopping list
- 1 cup high quality, raw honey(a variety is great, here: I used a wonderful dark, wildflower one from the Virgin Islands and sourwood, which is the most amazing taste :) shopping list
- 1/2 cup butter, melted shopping list
- 2 eggs shopping list
- 1t vanilla shopping list
- 1 cup double strength brewed tea(I used 1 bag Celestial seasonings apple Cranberry and 1 Earl Grey) shopping list
- 1/2 cup sparkling apple juice shopping list
- 2 shots whiskey or rum(I used spiced), optional shopping list
- 1/2 cup currants shopping list
- 1/2 cup chopped nuts shopping list
How to make it
- Combine flours, cinnamon, nutmeg, baking powder, baking soda and salt in large bowl, and set aside.
- In electric or stand mixer, combine sugars and butter and mix well.
- Add honey and beat until smooth.
- Add vanilla and mix again.
- Add eggs, 1 at a time, beating between each
- Alternate adding dry ingredients and remaining wet ingredients(juice, tea and alcohol, if using) and mix slowly between each addition, until fully incorporated
- Fold in nuts and currants
- Pour into prepared(sprayed or greased) mini loaf pans, a lil more than 1/2 full. See Photo. Can use other pans, a Bundt pan, loaf pans(2, probably), 9X13, or even muffin pans. I used an 8 welled mini loaf pan and 2 slightly larger, aluminum mini loaf pans, as I was giving most as gifts.
- Bake at 350 until toothpick comes out JUST clean and cakes have risen nicely and are a beautiful golden color. See Photo. Time will vary, depending on the pan sizes/shapes. I baked the multi well pan for 30 minutes, the larger ones, 7 minutes longer, and the larger volume pans may take up to 45-50 minutes. DO NOT OVERBAKE
- Serve with whipped cream, if desired.
