Teaghans Favourite Cake

- 1/4 c brown sugar shopping list
- 1/4 c sugar shopping list
- 1/2 c Splenda shopping list
- 1/4 c shortening shopping list
- 1/4 c thick prune puree (or apple butter, not sauce) shopping list
- 2 eggs shopping list
- 2 tsp vanilla shopping list
- 2 Tbsp red food colouring shopping list
- 1 Tbsp water shopping list
- 3 tbsp cocoa shopping list
- 1 1/4 c all-purpose flour shopping list
- 1 c whole-wheat flour shopping list
- 1/2 tsp salt shopping list
- 1 c buttermilk shopping list
- 1 Tbsp vinegar shopping list
- 1 1/2 tsp baking soda shopping list
How to make it
- Preheat oven to 350 F. Grease / flour either two round 9" cake pans or one large (9x13") pan.
- Cream sugars, Splenda, shortening, and prune puree.
- Add eggs and vanilla, beat well.
- Make a paste of the food colouring, water and cocoa powder, add to above mixture.
- Mix flours and salt.
- Add dry ingredients alternately with the buttermilk to the creamed mixture.
- Mix vinegar and baking soda to combine well (it will foam, if it doesn't, you need new baking soda!).
- Add to the batter and blend well.
- Pour into prepared pan(s).
- Bake 30 minutes, test for doneness.
