茶叶蛋 Tea Eggs

- 6 eggs shopping list
A
- 3 tbsp. soy sauce shopping list
- 1 tsp. salt shopping list
- 1 tbsp. black tea leaves or 1 tea bag shopping list
- 4 pieces star anise shopping list
- 1 small stick cinnamon or cassia bark shopping list
- 1 tsp. cracked peppercorns (optional) shopping list
- 2 strips dried mandarin peel (optional) shopping list
How to make it
- Place unshelled eggs in saucepan of cold water. Bring to a boil, then simmer for 2 minutes.
- Remove the eggs. With a knife, tap each egg to slightly crack the shells in two or three places. Return to saucepan.
- Add A and stir. Cover and simmer for 2 hours, adding water as necessary. Drain, serve hot or cold.
- Cook longer for a stronger flavour and a deeper colour.
