How to make it

  • Pre-heat oven to 350F
  • Roast Garlic - take skin off whole garlic till u can see the individual cloves. Now where the garlic comes to a point cut off about 1/4 inch so all the garlic is exposed. Take a muffin tray and put exposed side up. Drizzle olive oil over it and salt and pepper it. Cover exposed end with foil and bake for 40 min. Let garlic cool and squeeze garlic out and mash to a paste See Photo
  • Cook Bacon Crispy and reserve 2 tablespoons of the bacon fat.
  • Toast Bread till brown then slice into thin strips and cut other direction to make crumbs. Mix cooled crumbs, crumbled bacon, Parmesan, Ramano, melted butter, and olive oil. Set topping aside.
  • Start Pasta. Pre-Heat oven 375F. Saute Shallots on low with bacon fat for a minute. Then add 6 tablespoons butter and suate till they run clear and brown. Add flour and cook for about 3 min till it becomes a paste. Slowly add milk mixing well. Once all the milk is in there add the mashed garlic we made earlier along with dry spices salt, pepper, nutmeg mix well. Cook the sauce till it thickens ( I use a spoon to gauge it. It will leave a heavy coat on the spoon) See Photo. Move heat to low and add all your cheeses slowly till all is melted and sauce is consistant. I taste it and add more salt and pepper as needed.
  • Drain noodles and in a large greased baking dish mix noodles with sauce we made. Coat with topping and cover with foil. Cook for 15 min then remove foil, cook an additional 5-8 min uncovered to brown top. Eat and fall in love with this recipe. See Photo

    I would not recomend Velveeta because it would offset the taste of the mac. Trust me its plenty creamy enough. If you do add it, do it if you want to re-heat it..

    Another yummy recipe. Now, I'd have to add a bit of Velveeta for creaminess--don't cringe, just a bit. :-) along with the fontina cheese.

    Was just kidding about the Velveeta because I have a group here on GR.
