How to make it

  • Cover the bottom of a large pan with olive oil and heat on medium high.
  • Add the bell pepper, celery, carrot, onion, and garlic to the pan. Season with salt and pepper. Zest the lemon and add half of the zest and half of the juice to the veggies. Cook for 10-15 minutes, or until the veggies have become very soft; almost mushy. Let them cool until you are able to handle them with your hands.
  • In a large bowl, combine the ground turkey, veggies, egg, breadcrumbs, oregano, salt & pepper, and the rest of the lemon juice & zest. Mix well with your hands (you could use a spoon, but c'mon, live a little!) Form thick, round patties, about 4 inches in diameter. Make them a bit thinner in the middle than around the edges.
  • Barely cover the bottom of a large, clean pan with canola oil, and heat on medium high. When the oil is hot (a splash of water should sizzle in it), place 2 or 3 burgers in, leaving yourself room to flip them. Turn down to medium and cook about 7 minutes on the first side, and about 5 minutes on the second side. Deglaze your pan with a splash of white wine vinegar right before the first flip. Try to remove little bits from the pan in between batches so that they don't burn and disflavor your burgers! Continue the process with all of the burgers, setting them on paper towels to drain.
  • Serve burgers hot in pita bread, smothered in tzaziki :)
