Coconut French Toast

- 8 thick slices of crusty bread shopping list
- 4 eggs shopping list
- 1 cup shredded coconut shopping list
- 1 tsp vanilla extract shopping list
- 1/2 cup vanilla almond milk shopping list
- 1 tsp ground cinnamon shopping list
- 1/4 tsp ground nutmeg shopping list
- 1/4 tsp ground cloves shopping list
- coconut oil shopping list
- garnish (optional): sliced strawberries, powdered sugar, maple syrup shopping list
How to make it
- Whisk the eggs, milk, vanilla, cinnamon, nutmeg, and cloves together in a shallow bowl.
- Spread out the shredded coconut on a plate.
- Cover the bottom of a large pan with coconut oil and heat on medium high.
- Dip one piece of bread at a time in the egg mixture, then coat it with the shredded coconut.
- Turn the heat down to medium and fry 2 slices at a time. Flip after about 3 minutes, or until golden. You may need to carefully wipe the pan with a paper towel to remove any loose bits, so that they don't burn. Then add more coconut oil to the pan before frying more bread.
- Serve hot topped with sliced strawberries, maple syrup, and/or powdered sugar.
