How to make it

  • Whisk the eggs, milk, vanilla, cinnamon, nutmeg, and cloves together in a shallow bowl.
  • Spread out the shredded coconut on a plate.
  • Cover the bottom of a large pan with coconut oil and heat on medium high.
  • Dip one piece of bread at a time in the egg mixture, then coat it with the shredded coconut.
  • Turn the heat down to medium and fry 2 slices at a time. Flip after about 3 minutes, or until golden. You may need to carefully wipe the pan with a paper towel to remove any loose bits, so that they don't burn. Then add more coconut oil to the pan before frying more bread.
  • Serve hot topped with sliced strawberries, maple syrup, and/or powdered sugar.

    Is less than 12 hours after you posted it quick enough to make it, icm? :) I make it a habit to bookmark recipes I have intention of making....and, I do well with that...but, sometimes, a recipe just hits at just the right time, under just the right circumstances. This is one of those. ;) I was in a position to make breakfast just for me, this morning, I LOVE coconut, I had some hearty oatmeal bread that was begging to be used, and fresh berries chiming in, too...and, up pops your post last night. :) This was SO good! I left out the cloves, because I don't like them, and I topped with a lil honey along with a sprinkling of powdered sugar and the berries. Also, I did use butter to fry, so I think it's important to note in case anyone tried it with butter, because coconut oil can be hard to find or pricey for some, if you use butter, the taste is fabulous, BUT, make sure to keep the temp a lil lower and rebutter the pan as you flip the toast, too...it's gonna brown the coconut quicker than the higher smoke point oils will. :) Awesome post, thanks for adding it when you did! ;)
