How to make it

  • Preheat oven to 350
  • Melt butter in small glass bowl,add ritz cracker crumbs and combine gently. Spray shallow baking pan with spray,put few cracker crumbs in bottom of pan. Lay haddock in pan,cover with remaining cracker crumbs,squeeze lemon and sprinkle parsley over fish.
  • Bake 350' for 10-20 mins,watching closely,as fillets vary in size,don't over cook! Mine took 12 mins,I put under broiler for a min or two to crisp up a little more..Remove when fish is white and flakes easily.

    Thanks for posting another smashing recipe. I love haddock, but have never used Ritz crackers to do a crumb coating! I'll definitely try this.
