Potato Patties Recipe
Fun way to make potatoes as a side dish. Double recipe for more depending on how big you make them.

Ingredients
  • 2 cups cold mashed potatoes
  • 1/2 cup flour
  • 2/3 cup milk
  • 3 eggs, beaten
  • 2 teaspoons baking powder
  • 1 onion, chopped
  • 2 tablespoons parsley, diced
  • salt and pepper to taste
  • butter for frying
  • Sour cream for serving (I make paprika sour cream for this)

Directions
  1. In a bowl, mix together all the ingredients except butter and sour cream.
  2. In a skillet, heat to medium-high and melt butter.
  3. Drop potato mixture by the spoonful into the melted butter and fry, turning once, to a golden brown.
  4. Serve with sour cream (I add paprika to the sour cream and mix it)

You could make your potato skins with southwestern dip recipe that you posted today and use the scooped out potato meat to make these. Two good things from one. Potatoes and sour cream, always yummy.
