Chile Chop Sandwiches

- 6 boneless pork chops, 1/2-3/4 inches thick shopping list
- 6 hamburger or sandwich roll buns shopping list
- 8oz sliced Provolone, Jack or havarti cheese shopping list
For Marinade
- 1T ancho chile powder shopping list
- 1T pasilla chile powder(subs are fine, but stick with the milder, smokier versions :) shopping list
- 1T Mexican or Spanish paprika shopping list
- 1T dried Mexican oregano shopping list
- 1T dry mustard shopping list
- 1/2 cup fresh lime juice shopping list
- 1T red wine vinegar shopping list
- 1T worcestershire sauce shopping list
- 1/4 cup olive oil shopping list
For Wilted spinach Topping
- 1/2lb smoked bacon shopping list
- about 3-4 cups fresh baby spinach shopping list
- 1 vidalia onion, sliced in rings or half rings shopping list
- kosher or sea salt and fresh ground pepper shopping list
How to make it
For Chops/Marinade
- Combine all marinade ingredients(and a lil pepper) other than olive oil in large stainless steel or glass bowl.
- Whisk to combine well.
- Remove about 1/3 cup of the marinade and set aside.
- To the rest, add the olive oil and whisk, again.
- Add chops to marinade and toss to coat. Let rest at room temp while preparing grill and rest of ingredients. Toss once or twice to coat evenly.
For Wilted Spinach Topping
- Cook bacon until crisp and crumble. Or, do like I do. Cut raw(partially frozen) bacon into small pieces, THEN fry til crisp.
- Combine spinach and onion slices in large bowl.
- Add bacon and drippings(you only need a 2-3T, so if there's more, you can discard it) to spinach and onion and toss well.
- Add reserved marinade(NOT the left over from what the pork was in, but the bit you kept out before adding the oil:) and toss again.
To Prepare Sandwich
- Grill chops over medium high heat for just about 3 minutes each side. Cook only until inside temp reaches no more than 160.(apparently safe temp for pork is now 145, but I still cook til about 155 and serve at 160)
- Toss cut buns on grill too, briefly, if desired.
- Add sliced cheese to bottom bun, top with pork chop then some of the wilted spinach topping.
