Watermelon, Feta & Mint Salad

- 3 1/2 cups seedless watermelon cut in 1 1/2 inch chunks or scooped balls (using melonballer) shopping list
- 4 oz. or 1 1/2 cups feta cheese, cut in about 1/2 inch cubes shopping list
- 1 tbsp olive oil shopping list
- 1 tbsp orange muscat champagne vinegar (Trader Joe's) shopping list
- 3 tbsp fresh mint leaves, coarsely chopped shopping list
How to make it
- Combine watermelon and feta in a bowl. In a separate bowl, combine olive oil, vinegar, and mint leaves. Mix well. Pour over watermelon & feta. Toss gently to coat. Serve or chill until desired temperature is reached.

Dahlia, this is one of the best representations of watermelon salad......I love the combination and addition of mint. I actually add a few radishes to mine for crunch and bite.....lovely post and lovely picture.
