Watermelon, Feta & Mint Bites

We just are coming off a late summer heat wave here in Cali so I made these yesterday for the new Magnolia Store opening at Best Buy in my city. Super easy, looks cool and yummy!
Ingredients
- 1 organic seedless watermelon (must be ripe & sweet!) shopping list
- mint leaves shopping list
- reduced balsamic vinegar shopping list
- high quality feta cheese, large crumbles shopping list
How to make it
- cut watermelon into 1 inch slices. Using a small, round and deep cookie cutter, cut out rounds of watermelon (or you can cut into nice cubes with a knife). place watermelon rounds/cubes on appetizer spoons. Squirt balsamic reduction across watermelon, top with a torn piece of mint and a piece of feta.
