Simple French Onion Soup

- 6 large yellow or red onions, thinly sliced (I sometimes use a combo of both) shopping list
- 3 tbls. olive oil shopping list
- 1/2 cup dry white wine or dry sherry shopping list
- 1/2 tsp. sugar shopping list
- 1/4-1/2 tsp. dried thyme shopping list
- 1 bay leaf shopping list
- 8 cups beef broth shopping list
- 2 cloves garlic, minced shopping list
- salt and pepper to taste shopping list
- 1 1/2 cups gruyere cheese, grated shopping list
- 8 slices French bread, cubed and toasted shopping list
How to make it
- Over medium heat, add oil to heat.
- Add onions, salt and pepper.
- Cook, stirring occasionally
- After 10 minutes add sugar and stir to combine
- Cook another 15-20 minutes until onions are caramelized
- Add garlic and cook for a minute
- Add wine or sherry, thyme and bay leaf
- Stir to combine
- Add beef broth, stir to combine
- Cover pan partially and simmer for half an hour
- Season with salt and pepper
- Remove bay leaf
- Ladle soup into ovenproof soup bowls
- Top each one with toasted croutons
- Sprinkle gruyere top of croutons
- Bake in oven at 400 until cheese is bubbling and melted
