Citrus Glazed Blueberry Bread

Bread
- 1/3 cup butter; melted shopping list
- 1 cup granulated sugar shopping list
- 1 tbsp juice from a lemon shopping list
- 2 eggs shopping list
- 1 1/2 cups all-purpose flour shopping list
- 1 tsp baking powder shopping list
- 1 tsp salt shopping list
- 1/2 cup milk shopping list
- zest from 1/2 fresh lemon shopping list
- 1/2 cup chopped walnuts shopping list
- 1 cup fresh (or frozen) blueberries shopping list
glaze
- 2 tbsp lemon juice shopping list
- 1 tsp lemon zest shopping list
- 1/4 cup of sugar shopping list
How to make it
Bread
- Preheat oven to 350 degrees F and grease an 8 X 4 inch loaf pan.
- In a batter bowl, beat the butter, sugar, lemon juice and eggs.
- In a small bowl combine the flour, baking powder and salt.
- Stir in (by hand with a whisk) one half of the flour mixture into the egg mixture then stir in 1/4 cup of milk. Repeat this step with the remaining flour mixture and milk.
- Bake in preheated oven for 55-65 min until a toothpick inserted into the center comes out clean.
- Cool bread for 10 min in pan and then turn onto a cooling rack for 15-20 min.
Glaze
- Mix all the ingredients in a small bowl.
- After the bread has come out of the oven pour the glaze over the loaf while it is still warm.
