How to make it

  • Prepare orzo per package directions, but replacing 2 cups of the water with stock. Cook about 1 minute less than called for.
  • Drain(reserve about 1 cup of the liquid) and rinse with cold water.
  • Set aside
  • In large sauce pan, melt butter and add onion, garlic and squash.
  • Saute until tender, about 10 minutes.
  • Add lime juice and cream and stir well.
  • Heat about 7 minutes, stirring occasionally, until thickened.
  • Reduce heat to low and add orzo salt and pepper and shrimp and stir well.
  • Add cheese then put the lid on and turn off the heat.
  • Let rest while preparing rest of meal(5-7 minutes or so)
  • Stir once more, well, before serving. (add a lil pasta water, if needed, at this time, but hopefully you won't need any..I didn't :)

    I FINALLY made this and it is AMAZING! I love the cooking technique - so easy, but the result is very elegant and delicious. I shopped for this recipe from memory, soooo...used large shrimp and lemon instead of lime. This dish was perfect in every way!

    Nice touch kiddo. Which kind of Manchego cheese did you use. Yep, there are several kinds and as I'm going to have to order this in from New Zealand I may as well get the right kind. Great flavor combo; by the way. RJ
