Cabbage Latkes

- 2 cups finely grated cabbage (preboil and drain well-to tenderize) shopping list
- 1/4 cup egg beaters shopping list
- Liquid egg whites to equal 2 egg whites shopping list
- 1 scallion finely choppped shopping list
- 1 small onion finely chopped shopping list
- 2 tbsp whole wheat flour shopping list
- salt & pepper to taste shopping list
- 1 tsp garlic powder shopping list
- 1 tsp paprika shopping list
- 1/2 tsp dill shopping list
- 1 tsp parsley or cilantro shopping list
How to make it
- (Braise or preboil grated cabbage to soften) (drain well )
- In large bowl: mix eggbeaters & egg whites with scallion & onion
- Add drained cabbage and flour-mix well
- Add seasonings to taste
- (If needed add a little more flour to make it easier to handle)
- Heat 1 tbsp canola oil in non stick skillet over medium high heat
- With wet hands, form latke (about 1-1/2" in diameter) and fry on both sides till cooked (do not move around till firm crust forms on bottom). Cook 5-8 minutes on each side
- Wipe skillet between batches and add a little oil if needed only
