How to make it

  • In a large pot cook the onion and garlic in the olive oil for about 5 minutes.
  • Add the potato, carrots, salt, pepper and the sprig of lemon-thyme and give it a stir.
  • Pour the water over the vegetables and let it simmer for about 40 minutes or until the carrots are tender.
  • Remove the thyme sprig and reduce the soup to puree. Add more water if desired, depending on the consistency you look forward on your bisque.
  • Add the cream and stir before serving.
