Carrot Bisque

- 2 tbsp olive oil shopping list
- 1 medium onion, finely chopped shopping list
- 2 garlic cloves, minced shopping list
- 1 large potato, cubed shopping list
- 2 cups carrots, finely cubed shopping list
- 5 cups water shopping list
- salt and pepper to taste shopping list
- 1 sprig of lemon-thyme shopping list
- 1/3 cup of single cream shopping list
How to make it
- In a large pot cook the onion and garlic in the olive oil for about 5 minutes.
- Add the potato, carrots, salt, pepper and the sprig of lemon-thyme and give it a stir.
- Pour the water over the vegetables and let it simmer for about 40 minutes or until the carrots are tender.
- Remove the thyme sprig and reduce the soup to puree. Add more water if desired, depending on the consistency you look forward on your bisque.
- Add the cream and stir before serving.
