How to make it

  • Place cucumber in a colander set over a bowl.
  • Sprinkle with salt.
  • Let stand 30 minutes to drain off excess liquid.
  • Rinse with cool water and pat dry with paper towels.
  • In a salad bowl, combine drained cucumber and chopped green onions.
  • In a small bowl, combine all Dressing ingredients.
  • Pour over cucumber and onions, toss to coat.
  • Garnish with green-onion flowers.
  • To make green-onion flowers, trim top and bottom from a green onion leaving a 3-inch stalk.
  • With a sharp knife, shred the white bulb end to within 1-inch of the green top.
  • Place in iced water at least 1 hour, or overnight.
  • The shredded part will open up into a flower.

    keni ate it and said...
    This was so good. I did use Mexican oregano rather than marjoram, because I don't grow it, nor do I have any dried...and, I used regular cukes cus I have them coming out my ears. Delicious and a wonderful, quick summer dish. I did the green onion flowers...I just don't know if I did them right. :) They were pretty enough for us, though!
