How to make it

  • Mix all and dredge in flour. Fry in oil, turning when golden brown on each side. I got 7 cakes or patties, yield depends on how you shape them.
  • Ideally I would serve each on a lettuce leaf cup, wedge of lemon and tarter sauce on the side.

    I kept looking for the crab then saw the word "mock" hehehe. I had made up some of this for dinner last week and just had a left over one under a fried egg for a "mock" eggs benedict. It is a great way to use zucchini and is good to trick non-zucchini eating folks into enjoying this summer bounty.
