Baked Jalapeno Poppers

- 5 Large jalapenos, cut in half lengthwise and seeded. shopping list
- Sharp cheddar, grated ..Eyeball it. shopping list
- goat cheese (chevre), crumbled ... Eyeball it. shopping list
- cream cheese, softened ...Eyeball it. shopping list
- Approx. 6 strips of bacon, cooked and crumbled shopping list
- 1/2 C Plain panko bread crumbs shopping list
- 2 TBS butter, melted shopping list
How to make it
- Preheat oven to 375 F.
- In a small-medium bowl, mix cheeses and bacon and put aside.
- After jalapenos are cleaned, use a teaspoon to fill each "boat" with enough cheese and bacon mixture to be even with the edges of the pepper.
- Melt butter and add to the panko, mixing thoroughly.
- Take each popper and dip face-down into the panko, so that the cheese mixture is now covered in buttery bread crumbs...drooooollll.....
- Bake for approximately 25 minutes, or until cheese is melty and the breadcrumbs are browned. If cheese melts before the breadcrumbs brown, stick the pan under the broiler for a moment or two until desired effect is reached.
