Ny Style Crumb Cake Variations

- 2 eggs shopping list
- 1 cup milk or buttermilk( for a more mellow and tangy flavor ) shopping list
- 3 cups flour shopping list
- 1 1/2 cups sugar shopping list
- 4 tsp baking powder shopping list
- 1 tsp salt shopping list
- 1 cup melted butter, oil or margarine shopping list
- 2 tsp vanilla shopping list
- Crumb topping: shopping list
- 2 1/2 cups flour shopping list
- 2 cups white sugar shopping list
- 1/4 cup cinnamon ( yes ) shopping list
- 1 cup melted butter, margarine or oil shopping list
- 1 Tbs vanilla shopping list
- grated nutmeg shopping list
How to make it
- Grease or butter pan of choice ( 9x 13, 8 x 12, muffins tins, spring form , cake layer pans, etc.
- Combine the milk, melted margarine or oil and eggs
- In a large bowl place all the dry ingredients
- Beat both mixtures only until well combined
- Place batter in the selected pan(s) of choice
- Make crumbs:
- Combine dry ingredients well
- Mix in the melted margarine, butter or oil with finger tips to make coarse crumbs
- Sprinkle crumbs thickly and evenly over the batter ( you may have extra crumbs and these freeze well if not used )
- Sprinkle on fresh nutmeg
- Place in middle oven rack
- Bake 350F until tested done with a wooden toothpick, being careful not to over bake
- Let cool on rack to warm
- Yield of muffins depends on size of muffin cups etc.
