How to make it

  • In large bowl of stand mixer, dissolve yeast in warm water. Add milk, sugar, butter, egg yolk, salt, and 2 cups of the flour. With dough hook attachment, beat on medium speed for 3 minutes. Mix in enough remaining flour to form a soft dough (it will be sticky).
  • Turn onto a clean, dry, floured counter. Knead until smooth and elastic, about 6-8 minutes, sprinkling in additional flour as needed. Place in a bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour.
  • In small bowl, beat together egg white and water. Sprinkle seed mixture onto a dinner plate.
  • Punch dough down. Turn onto a lightly floured surface, divide in half, shape into two round loaves. Brush bottom of loaf with egg white then dip onto seed mixture to coat the bottom. Place on cookie sheet sprayed with cooking spray. Brush top and sides of loaf with egg white, then sprinkle with seed mixture to cover heavily. Repeat for second loaf.
  • Cover and let rise in a warm place until doubled, about 30 minutes.
  • Bake at 375 degrees for 20-25 minutes or until golden brown. Break apart or slice and serve warm.

    Nice little artisan loaves. Good light saltiness on the crust that transferred flavor into the loaf when chewed.
