We just made this for dinner. I added some chopped fresh garlic to the chicken and substituted capers for the olives. It was very tasty.

Lyanthya made this for us once and I make this all the time now. I use several medium sized jars of different varieties of roasted peppers (pimento and bell and a few hot cherry peppers to give it a bite). A few other twists that came out well: topping with toasted pinole nuts (pine nuts) instead of parmesan, adding sliced caper berries, adding minced green peppercorns, adding capers. Next time I think I'll experiment with different flavors of olives.
