That Pasta Dish That I Make Recipe
Try this out if you're sick of plain pasta dishes, its a great alternative to a heavy sauce.

Ingredients
  • 1 lg box of penne pasta
  • 3-4 boneless skinless chicken breasts
  • i lg jar of roasted red peppers
  • 1 sm.l can of sliced black olives
  • 1 c. chicken stock
  • alt. ingredient: Replace olives with sauteed mushrooms.
  • Shredded parm. cheese to top.

Directions
  1. Cook penne pasta as directed on the box.
  2. Cut up chicken breasts into bite size chunks.
  3. Cut roasted red peppers into strips and set aside.
  4. If you are adding mushrooms to the recipe, begin by washing and slicing the mushrooms, then sauteing them in butter and salt and pepper until they are soft.
  5. Add chicken to the sautee pan with 2 tbsp of butter, salt and pepper.
  6. Once chicken is fully cooked, add cut up roasted red peppers, 1 c. chicken stock, and olives.
  7. Simmer at low for 10 to 15 min.
  8. Serve chicken topping over penne and top with shred. parm.

We just made this for dinner. I added some chopped fresh garlic to the chicken and substituted capers for the olives. It was very tasty.
