Buttermilk Cheesecake

- Crust shopping list
- 1 1/2 cups vanilla wafer or shortbread cookie crumbs shopping list
- 1/4 cup vanilla sugar shopping list
- 6 T salted butter, melted shopping list
- Filling shopping list
- 3, 8 oz packages regular cream cheese (room temperature) shopping list
- 1 cup sugar shopping list
- grated zest of 1 large lemon shopping list
- 1 1/2 t. pure vanilla extract shopping list
- 1 cup low-fat buttermilk shopping list
- 4 large eggs shopping list
How to make it
- Preheat oven to 350 degrees.
- Grease a 9" springform pan.
- To make crust: stir cookie crumbs, sugar and butter in a bowl. Press into bottom and 1 1/2" up sides of prepared pan.
- To make filling: beat cream cheese and sugar with electric mixer until smooth. Mix in lemon zest and vanilla. Add buttermilk slowly, mixing until smooth. Beat in eggs, one at a time. Pour into crust.
- Bake at 350 for 30 minutes, then reduce heat to 300 and bake 30 minutes more. Turn oven off and leave in oven for 30 minutes.
- Serve at room temperature or chilled.
