How to make it

  • Combine all meatball ingredients in large bowl.
  • Mix well with hands, but do not over work.
  • Let rest in fridge for a couple hours, or, just at room temperature.
  • Form mixture into about 1T(I use my cookie scoop) sized balls and place on wire rack over cookie sheet, or similar set up.
  • Bake at 350 for about 17-20 minutes, just until cooked through.
  • Serve with toothpicks or skewers with the dipping sauce.

    Nice combo Keni. The mint would never have occurred to me but is a very nice touch. How about this, with a bit of buttered pasta, for a light dinner? I like it. RJ
